Muffins Anyone?

    Hey Jeff,

    I baked some nice banana muffins just about a week ago. I found the recipe on a website (caloriecount.com?) and modified it to suit me. It has between 75 and 100 calories and tastes awesome.


    Low calorie, low fat muffins

    Ingredients
    1 cup all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1/8 teaspoon salt
    1 cup bananas, mashed
    1/4 cup sugar
    1/4 cup applesauce
    1 egg
    1/2 teaspoon vanilla extract

    Directions
    1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

    2. Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the applesauce and vanilla. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.

    3. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. For best flavor, place in an airtight container or bag overnight.

    I found that you can substitute the regular bananas for ones that have become brown and ripe and the muffins gain more flavour. Plus it allows you to use those mushy bananas and use them for something more than compost/recycling/garbage.

    Also, if you substitute the 1cup of all purpose flour for 1/2 cup all purpose flour, 1/2 cup whole wheat flour MIX, it’s even healthier for you and it’s not gonna be bland!!
